Allergy Aware Asian Fare by Sharon Wong

Hi, thank you for being here and fabulous readers and friends!! I am still spending much needed down time with family this week. However, summer is almost over and we'll soon be back to school, back to work, and feeling busy. This week I am sharing some of my time-saving recipes and strategies to help you free up some of your time by using a small appliance.

I don't share enough about making rice in my rice cooker, which pretty much takes care of a side dish while I work on a veggie side and a main dish of either fish, chicken, or tofu most of the time. Leftover rice can be used to make a fried rice. If you don't have a rice cooker, there's a recipe for making rice in a pot for you.

Instant Pot Teriyaki Chicken Thighs

My recipe for oven broiled chicken thighs is already fast and easy. Making boneless, skinless chicken thighs in an Instant Pot is even easier and does not heat up your kitchen. This recipe is part of a 3 part menu plan to get 3 dishes on the table in about 45 minutes.

5 Spice Chicken Drumsticks

Usually 5 spice soy sauce chicken is made with a whole chicken and in a pot. Slow cook chicken drumsticks in your slow cooker for a delicious meal with plenty of leftovers for lunch. Consider saving the sauce in a clean jar and refrigerating it to use in stir fries or other braising recipes.

Peaches and Cream Ice Cream, nut & egg free

If you have an ice cream maker and some ripe summer peaches, put them to good use to make homemade ice cream to beat the summer heat!! Make the base and churn the ice cream during the coolest parts of the day. It works for me when I make the base at night, refrigerate overnight, and then churn the ice cream in the morning, so that it's ready for dessert after dinner.

Additional Updates

I would like to share a friendly reminder to allow enough time to refill your epinephrine prescriptions if you need new ones in the next two months.

  • If there is a specific name brand of epi you would like, allow extra time for prior authorizations, deliveries, etc..
  • Even if you want a specific kind of generic epi, allow extra time for your pharmacy to order what you want.
  • Call your pharmacy to find out which generic epi they have for you and check my blog post for a coupon (scroll to the bottom). I didn't know my pharmacy had an Amneal epi ready for us and I missed a chance to use the $10 coupon!
  • In some cases, you might even need to order a trainer to practice with if it's a new device for you.
  • Remember to check the expiration before you leave the pharmacy counter.
