How are you? I hope you're having a great day! It's been a while since I last sent out a newsletter but like that awkward friend that suddenly texts you out of the blue to have coffee, here I am, in your inbox to say hi and to share an update.
On a personal note, about a year ago I had a health scare while traveling for work. My heart was pounding super fast and I thought I was going to have a heart attack. I think what happened was that my heart was beating to the dance music on a dinner/dance cruise because my friends and I were seated next to the dance floor. I felt better after I moved away and put on some noise cancelling headphones.
I had a false alarm about my health but I thought about what would I do if I had experienced a heart attack? I prioritized my exercise, sleep, and nutrition. A year later my clothes are looser and I can see some cute little biceps when I flex!
Even though I think about my health, menopause, and strength training a lot, I don't want to be a wellness influencer. I will always be a food allergy mom that is evidenced-based, so I plan to keep advocating and blogging about food allergies and nut-free Asian recipes.
Yummy Summer Recipes
*New Recipe* This chicken and green bean stir fry recipe is my latest recipe. It's called "Chow Nup Nup" because the green beans are diced into small pieces (nup nup). I was making this dish a lot for someone who was recovering from some dental issue and linked a lot of other soft dishes that might be helpful for someone after they get their braces adjusted or a tooth extraction.
My birthday is coming up next month and maybe I can make space in my freezer to make an egg-free, nut-free Aquafaba Baked Alaska. Baked Alaska is basically an ice cream cake coated with meringue and then flambed! As a home cook, I actually prefer an aquafaba meringue for food safety reasons and to broil or torch the merigue.
I'm going to a potluck dinner tonight and the hostess (a FA mom, hi N!) is making kalua pork and cabbage as the main entree. I know the assignment and am making a Hawaiian mac salad and butter mochi to round out the Hawaiian theme. My butter mochi recipe receives rave reviews and one reader commented that they use my recipe for gift-giving. ๐ฉต

Summer Homework for Food Allergy Moms and Dads
I hope you are enjoying your summer. There are a few food allergy related things I always did when my sons were younger.
- Make appointments with the allergist and pediatrician, as needed.
- Fill out medical forms in advance. Prepare for back to school by fill out a new emergency care plan and school forms for medications at school.
- Review your child's 504 plan. Take notes on what went well and if anything needs to be discussed in the fall.
- Order new epinephrine devices. Sometimes it takes a couple of months to have enough new epi for school, self-carry, and daycare (as needed).
- Try out new foods and recipes for school lunches. I updated my list of peanut-free spreads recently.
- If you're traveling, check if there are some nut-free bakeries in the area and remember to check for hidden allergens in non-food products.
